Mini cheesecakes are proof that the best things come in small packages. Tiny in size but big on chocolatey flavour, these are perfect, bite-sized indulgences. They’re a catering menu fave, but you can now bring the party to your own home and effortlessly wow any guest. Big occasion? Double the batch!
Toppings (optional): berries
- Arrange one oven rack in centre of oven, and another oven rack on the bottom. Place two Muffin Makers on unlined Sheet Pan. Fill a small oven-proof dish with hot water and place on lowest rack. Preheat oven to 325° F.
- In a medium bowl, combine crumbs with butter. Divide between Muffin Makers and press down firmly.
- Using a stand mixer or hand mixer, in another bowl, beat cream cheese with mix until smooth. Scrape down the sides as needed. Beat in eggs, one at a time. Add yogurt and beat until smooth.
- Divide filling between muffin cavities. Bake 35 min or until the centers are almost set. Let cool in pan 20 min, then pop out of mold. Top with berries, if desired. Place on a plate covered with a layer of parchment paper to prevent any sticking. Refrigerate until ready to serve.
